You Know What’s Fun?

Panini 1

Saute red onion and garlic.  Season with s & p.

Poach some chicken and slice it.

Make dressing with oil, vinegar, thyme, oregano, marjoram if you have it, s & p.

Soak reconstituted sundried tomatoes, plus the onions and garlic, in the dressing for a bit.  Brush a little dressing on pieces of nice, crusty bread.

Make sandwiches on the oil-brushed side of the bread.  Chicken, tomatoes and onions…

Fresh spinach…

Havarti.

Then smash the sandwiches in a panini maker and cook until they’re brown and toasty and the cheese is running all over.  Mmmmmmm.….
